Brian W. Bonanno has spent over twenty years in professional kitchens, foodservice, and hospitality — from waiting late-night tables in Miami Beach to founding his own fast-casual restaurant — to spending six years at Union Square Hospitality Group’s two-Michelin-starred The Modern and the cafés at The Museum of Modern Art, and twelve years as VP of Operations for a premier 30-location dining group acquired by Elior North America.
A chef who traded his whites for tailored sport coats, Brian always keeps one clog in the kitchen — especially when cooking family dinners at his 1886 home in Morristown, NJ. He is a graduate of the Institute of Culinary Education and holds a Master Certificate in Hospitality Management from Michigan State University.
The One Clog Cookbook series is built on the component method and a simple belief: great home cooking comes from technique, not complexity.
